Ingredients

– 2 medium zucchini, sliced into half-moons

– 8 ounces cremini mushrooms, sliced

– 1 medium onion, thinly sliced

– 3 cloves garlic, minced

– 2 tablespoons olive oil

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 tablespoon lemon juice


Instructions

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the sliced zucchini, mushrooms, and onion. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.

3. Stir in the minced garlic and sauté for 1 minute more, until fragrant.

4. Season the sauteed vegetables with thyme, salt, and pepper.

5. Remove from heat and stir in the lemon juice.

6. Serve hot as a side dish.

Notes
