Description

Ingredients

– 1 lb Italian sausage, casings removed

– 1 tbsp olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 1 cup uncooked orzo pasta

– 2 cups low-sodium chicken broth

– 1 head of broccoli, florets cut into bite-sized pieces

– 1/4 cup grated Parmesan cheese

– Salt and pepper to taste


Instructions

1. – In a large skillet or Dutch oven, cook the sausage over medium-high heat, breaking it up as it cooks, until browned and cooked through, about 5-7 minutes. Transfer the sausage to a plate and set aside.

2. – In the same skillet, heat the olive oil over medium heat. Add the onion and sauté for 3-4 minutes until translucent. Add the garlic and cook for an additional minute until fragrant.

3. – Stir in the orzo and chicken broth. Bring the mixture to a boil, then reduce heat and simmer for 10-12 minutes, stirring occasionally, until the orzo is tender.

4. – Add the broccoli florets to the skillet and cook for an additional 3-5 minutes until the broccoli is tender-crisp.

5. – Return the cooked sausage to the skillet and stir to combine. Remove from heat and stir in the Parmesan cheese.

6. – Season with salt and pepper to taste.

7. – Serve hot and enjoy!

Notes

This dish can be easily customized – try swapping the sausage for chicken or shrimp, or adding in other vegetables like bell peppers or mushrooms. For a creamier texture, stir in a splash of heavy cream or Greek yogurt at the end.
