Ingredients
– 2 cups all-purpose flour
– 1 cup unsalted butter, chilled and cubed
– 1/4 cup granulated sugar
– 1/4 teaspoon salt
– 1/4 cup ice water
– 3 large eggs
– 1 cup honey
– 1/2 cup brewed chamomile tea, cooled
– 1 teaspoon vanilla extract
– 1/4 teaspoon sea salt
Instructions
1. In a food processor, pulse the flour, butter, sugar, and salt until mixture resembles coarse crumbs.
2. Add the ice water and pulse until dough just begins to hold together. Turn out onto a lightly floured surface and shape into a disc. Wrap in plastic and refrigerate for at least 1 hour.
3. Preheat oven to 375°F.
4. In a medium bowl, whisk together the eggs, honey, chamomile tea, vanilla, and sea salt until well combined.
5. Roll out the chilled dough into a 12-inch circle and transfer to a 9-inch pie plate. Trim the excess dough and crimp the edges.
6. Pour the honey-chamomile filling into the prepared pie crust.
7. Bake for 35-40 minutes, or until the center is set. Allow to cool completely before slicing and serving.
