Description
Rutabagas Romanoff is a creamy and comforting side dish that pairs perfectly with a variety of main courses. The tender rutabagas are simmered in a rich, tangy sauce made with sour cream, butter, and seasonings for a truly delightful flavor.
Ingredients
– 2 pounds rutabagas, peeled and cubed
– 1 cup sour cream
– 4 tablespoons unsalted butter
– 2 tablespoons all-purpose flour
– 1 teaspoon salt
– 1/2 teaspoon ground black pepper
– 1/4 teaspoon ground nutmeg
Instructions
1. Bring a large pot of salted water to a boil. Add the cubed rutabagas and cook until tender, about 15-20 minutes. Drain and set aside.
2. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 2 minutes, stirring constantly.
3. Gradually whisk in the sour cream and continue cooking until the sauce thickens, about 5 minutes.
4. Add the cooked rutabagas, salt, pepper, and nutmeg to the sour cream sauce. Stir to coat the rutabagas evenly.
5. Serve the Rutabagas Romanoff warm, garnished with chopped chives or parsley if desired.
Notes
For a richer flavor, you can use heavy cream in place of sour cream. The dish can also be baked in a casserole dish for a more traditional presentation.
