Ingredients

– 2 pounds roasted red peppers, diced

– 4 cups chicken broth

– 1 cup heavy cream

– 8 ounces Gouda cheese, shredded

– 2 cloves garlic, minced

– 1 teaspoon smoked paprika

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. 1. In a large saucepan, combine the diced roasted red peppers and chicken broth. Bring to a simmer over medium heat.

2. 2. Reduce heat to low and stir in the heavy cream, Gouda cheese, garlic, smoked paprika, salt, and black pepper. Cook, stirring frequently, until the cheese has melted and the soup is heated through, about 10 minutes.

3. 3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until creamy.

4. 4. Taste and adjust seasoning as needed. Serve hot, garnished with additional Gouda cheese, croutons, or fresh parsley if desired.

Notes

For a thicker soup, add an additional 1/2 cup of heavy cream. Leftover soup can be stored in the refrigerator for up to 4 days.
