Description
Tender, caramelized roasted carrots are topped with a creamy whipped ricotta and drizzled with a sweet and spicy hot honey, creating a delightful side dish that’s perfect for any meal.
Ingredients
– 2 lbs carrots, peeled and cut into 1-inch pieces
– 3 tbsp olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 1 cup ricotta cheese
– 2 tbsp heavy cream
– 1 tbsp honey
– 2 tbsp hot honey
Instructions
1. 1. Preheat the oven to 400°F (200°C).
2. 2. In a large bowl, toss the carrots with the olive oil, salt, and black pepper until well coated.
3. 3. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
4. 4. Roast the carrots for 20-25 minutes, stirring halfway, until tender and caramelized.
5. 5. In a small bowl, mix together the ricotta cheese, heavy cream, and 1 tbsp of honey until smooth and creamy.
6. 6. Arrange the roasted carrots on a serving dish and top with the whipped ricotta.
7. 7. Drizzle the hot honey over the top of the dish.
8. 8. Serve warm and enjoy!
Notes
For added flavor, you can sprinkle the roasted carrots with a pinch of cinnamon or a squeeze of fresh lemon juice before serving.
