Description
Roasted beets are combined with a creamy tahini lemon dressing in this quick and easy salad, making it a nourishing and flavor-packed meal.
Ingredients
– 4 medium beets, peeled and cubed
– 2 tablespoons olive oil
– Salt and pepper to taste
– 5 ounces mixed greens
– 1/4 cup tahini
– 2 tablespoons lemon juice
– 1 garlic clove, minced
– 2 tablespoons water
– 1 tablespoon honey (optional)
Instructions
1. – Preheat oven to 400°F. Toss the cubed beets with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, until tender.
2. – In a small bowl, whisk together the tahini, lemon juice, garlic, water, and honey (if using) to make the dressing.
3. – In a large salad bowl, combine the roasted beets and mixed greens. Drizzle the tahini lemon dressing over the salad and toss to coat.
4. – Serve immediately, garnished with additional herbs or crumbled feta cheese if desired.
Notes
This salad can be prepared in advance by roasting the beets and storing them in the refrigerator. The dressing can also be made ahead of time and kept chilled until ready to serve.
