Ingredients
– 1 lb beets, peeled and cut into 1-inch cubes
– 2 tbsp olive oil
– Salt and pepper to taste
– 1 sheet puff pastry, thawed
– 4 oz goat cheese, crumbled
– 2 tbsp honey
Instructions
1. 1. Preheat oven to 400°F. Toss the beet cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender.
2. 2. Roll out the puff pastry and cut into 6 squares. Press the squares into a muffin tin, forming tart shells.
3. 3. Fill each tart shell with the roasted beets and top with crumbled goat cheese.
4. 4. Bake for 18-20 minutes, until the pastry is golden brown.
5. 5. Drizzle the warm tarts with honey and serve.
