Ingredients
– 8 chicken thighs, bone-in and skin-on
– 1 cup apricot preserves
– 2 tablespoons soy sauce
– 3 garlic cloves, minced
– 1 tablespoon fresh thyme leaves
– 1 tablespoon lemon juice
– Salt and pepper to taste
Instructions
1. Preheat oven to 425°F.
2. Season the chicken thighs all over with salt and pepper.
3. In a small bowl, whisk together the apricot preserves, soy sauce, garlic, thyme, and lemon juice.
4. Place the chicken thighs in a large baking dish and pour the apricot glaze over the top, making sure to coat the chicken evenly.
5. Roast the chicken for 30-35 minutes, basting with the glaze halfway through, until the chicken is cooked through and the skin is crispy.
