Reuben Balls are a delicious and easy-to-make appetizer that combines the classic flavors of a Reuben sandwich. Ingredients
– 1 lb corned beef, finely chopped
– 1 cup sauerkraut, drained and chopped
– 1 cup shredded Swiss cheese
– 1/2 cup panko breadcrumbs
– 2 eggs, beaten
– 1 tsp caraway seeds (optional)
– 1/4 tsp black pepper
– Vegetable oil for frying
Instructions
1. 1. In a large bowl, combine the chopped corned beef, sauerkraut, Swiss cheese, panko breadcrumbs, eggs, caraway seeds (if using), and black pepper. Mix well until all the ingredients are evenly distributed.
2. 2. Scoop the mixture by the tablespoonful and roll into 1-inch balls.
3. 3. In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat.
4. 4. Working in batches, carefully add the Reuben Balls to the hot oil and fry for 2-3 minutes per side, or until golden brown.
5. 5. Drain the fried Reuben Balls on a paper towel-lined plate.

Notes
For a creamier filling, you can add a small amount of cream cheese or Thousand Island dressing to the mixture. You can also experiment with different cheese varieties, such as cheddar or Gruyère. For a healthier option, you can bake the Reuben Balls instead of frying them.
