Description

Remy’s Ratatouille Soup is a comforting, classic French dish that combines the flavors of roasted vegetables in a rich, aromatic broth. This easy-to-make soup is the perfect cozy meal for a chilly day.


Ingredients

– 2 tablespoons olive oil

– 1 large eggplant, diced

– 2 zucchini, diced

– 3 tomatoes, diced

– 1 onion, diced

– 3 cloves garlic, minced

– 2 cups vegetable broth

– 1 teaspoon dried thyme

– 1 teaspoon dried oregano

– Salt and pepper to taste

– Fresh basil leaves for garnish


Instructions

1. 1. In a large pot, heat the olive oil over medium heat.

2. 2. Add the diced eggplant, zucchini, tomatoes, onion, and garlic. Sauté for 8-10 minutes, stirring occasionally, until the vegetables are softened.

3. 3. Pour in the vegetable broth and stir in the thyme and oregano. Bring the soup to a simmer and let it cook for 15-20 minutes, or until the vegetables are very tender.
