Description

Ingredients

– 12 ounces fresh raspberries

– 8 ounces high-quality white chocolate, chopped

– 1 cup heavy cream

– 1/4 cup granulated sugar

– 1 teaspoon vanilla extract


Instructions

1. In a medium bowl, whip the heavy cream with an electric mixer until soft peaks form.

2. In a separate bowl, melt the white chocolate either in the microwave or over a double boiler, stirring frequently until smooth.

3. Gently fold the melted white chocolate into the whipped cream until well combined.

4. Fold in the vanilla extract.

5. Gently fold in the fresh raspberries, being careful not to crush them.

6. Spoon the mousse into individual serving dishes or a larger serving bowl.

7. Chill the mousse in the refrigerator for at least 2 hours, or until set.
