Description

Indulge in the delectable combination of raspberries and protein-packed goodness with these homemade Raspberry Protein Pop Tarts. Flaky, buttery pastry surrounds a sweet and tangy raspberry filling, making this a guilt-free treat that’s perfect for breakfast, snack time, or dessert.


Ingredients

– 2 cups all-purpose flour

– 1/2 cup unsalted butter, chilled and cubed

– 1/4 cup granulated sugar

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 1/2 cup cold water

– 1 cup fresh raspberries

– 1/4 cup raspberry jam

– 1/2 cup vanilla protein powder


Instructions

1. In a large bowl, combine the flour, sugar, baking powder, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.

2. Gradually add the cold water, mixing just until a dough forms. Wrap the dough in plastic and refrigerate for 30 minutes.

3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

4. On a lightly floured surface, roll the dough out to a 1/4-inch thickness. Cut into 6 rectangles.

5. In a small bowl, mash the raspberries and mix with the raspberry jam and protein powder.

6. Place a heaping tablespoon of the raspberry filling onto the center of 3 of the rectangles. Top with the remaining 3 rectangles and crimp the edges with a fork to seal.

7. Transfer the filled pop tarts to the prepared baking sheet. Bake for 20-25 minutes, or until golden brown.

8. Allow the pop tarts to cool for 5 minutes before serving.

Notes

For a crispier crust, brush the top of the pop tarts with a beaten egg before baking. Substitute other berries or jams for different flavor variations.
