These Raspberry Crumble Bars are a quick and easy dessert that’s bursting with fresh raspberry flavor. The buttery, crumbly topping complements the jammy fruit filling for a delightful treat.
Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 cup granulated sugar
– 1/2 cup unsalted butter, softened
– 1/4 teaspoon salt
– 2 cups fresh raspberries
– 1/4 cup granulated sugar
– 2 tablespoons cornstarch
Instructions
1. 1. Preheat oven to 350°F. Grease an 8×8-inch baking pan.
2. 2. In a medium bowl, combine the flour, 1/2 cup sugar, butter, and salt. Use a fork or your fingers to mix until mixture resembles coarse crumbs.
3. 3. Press half of the crumb mixture into the prepared baking pan.
4. 4. In a separate bowl, gently toss the raspberries with the 1/4 cup sugar and cornstarch.
5. 5. Spread the raspberry mixture evenly over the crumb base.
6. 6. Sprinkle the remaining crumb mixture over the top.
7. 7. Bake for 30-35 minutes, until the topping is golden brown.
8. 8. Allow to cool completely before cutting into bars.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. These bars also freeze well for up to 3 months.
