Ingredients
– 8 ounces ramen noodles
– 4 slices thick-cut bacon, diced
– 2 eggs
– 1/2 cup grated Parmesan cheese
– 2 tablespoons heavy cream
– 1 tablespoon chopped parsley
– Salt and black pepper to taste
– 4 large tortillas
Instructions
1. Cook the ramen noodles according to package instructions. Drain and set aside.
2. In a skillet, cook the diced bacon until crispy. Remove the bacon from the skillet, reserving the bacon fat.
3. In the same skillet, whisk the eggs with the Parmesan cheese and heavy cream. Cook the egg mixture over medium heat, stirring constantly, until it reaches a creamy consistency.
4. Add the cooked ramen noodles to the egg mixture and toss to combine. Season with salt and black pepper.
5. Place a tortilla on a flat surface and spoon the ramen carbonara mixture onto the center. Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito.
6. Repeat with the remaining tortillas and filling.
7. Serve the Ramen Carbonara Burritos warm, garnished with the crispy bacon and chopped parsley.
