Ingredients

– 1 cup mashed purple sweet potatoes (about 1 medium potato)

– 1/2 cup milk

– 1/4 cup granulated sugar

– 1/4 cup unsalted butter, melted

– 1 teaspoon salt

– 1 tablespoon active dry yeast

– 3 1/2 cups all-purpose flour, plus more for dusting


Instructions

1. 1. In a medium saucepan, bring the milk to a simmer over medium heat. Remove from heat and let cool to 110°F.

2. 2. In a large bowl, combine the warm milk, sugar, melted butter, and salt. Sprinkle the yeast over the top and let sit for 5 minutes until foamy.

3. 3. Add the mashed purple sweet potatoes and 2 cups of the flour. Use a wooden spoon to mix until a shaggy dough forms.

4. 4. Turn the dough out onto a lightly floured surface and knead for about 5 minutes, adding more flour as needed, until the dough is smooth and elastic.
