Description

Ingredients

– 1 15oz can pumpkin puree

– 3 large eggs

– 1 cup granulated sugar

– 1/2 cup vegetable oil

– 1 tsp vanilla extract

– 2 cups all-purpose flour

– 2 tsp baking powder

– 1 tsp baking soda

– 1 tsp ground cinnamon

– 1/2 tsp ground ginger

– 1/4 tsp ground cloves

– 1/4 tsp salt


Instructions

1. – Preheat oven to 350°F. Grease a 9×5 inch loaf pan.

2. – In a large bowl, whisk together the pumpkin, eggs, sugar, oil, and vanilla until well combined.

3. – In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt.

4. – Fold the dry ingredients into the wet ingredients just until no dry pockets remain. Do not overmix.

5. – Pour the batter into the prepared loaf pan and bake for 50-55 minutes, until a toothpick inserted in the center comes out clean.

6. – Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

– For a prettier presentation, reserve a few tablespoons of the batter and dollop it on top of the loaf before baking.

– Add 1 cup of chopped walnuts or pecans for extra texture and flavor.

– Swap out the oil for melted butter for a richer crumb.
