Description

This classic, comforting Potato Salad recipe comes together in just 5 minutes. With a creamy dressing and crunchy veggies, it’s the perfect easy side dish for any occasion.


Ingredients

– 3 pounds Yukon Gold potatoes, peeled and cubed

– 1 cup mayonnaise

– 1/4 cup sour cream

– 2 tablespoons Dijon mustard

– 2 tablespoons white vinegar

– 1 tablespoon sugar

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1 cup diced celery

– 1/2 cup diced onion

– 2 hard-boiled eggs, chopped


Instructions

1. – Bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 10-12 minutes. Drain and let cool completely.

2. – In a large bowl, whisk together the mayonnaise, sour cream, Dijon, vinegar, sugar, salt, and pepper.

3. – Add the cooled potatoes, celery, onion, and chopped eggs. Gently fold to combine.

4. – Chill for at least 30 minutes before serving to allow flavors to meld.

Notes

For a creamier texture, mash half the potatoes before folding into the dressing. You can also add in diced pickles, bacon bits, or chopped herbs for extra flavor.
