Juicy pork tenderloin coated in a sweet and tangy apple cider glaze, served alongside creamy sweet potato mash for a comforting and delicious meal.


Ingredients

– 1 (1-1.5 lb) pork tenderloin

– 1 cup apple cider

– 2 tbsp butter

– 1 tsp garlic powder

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper

– 2 lbs sweet potatoes, peeled and cubed

– 1/4 cup milk

– 2 tbsp brown sugar

– 1/4 tsp nutmeg


Instructions

1. 1. Preheat oven to 400°F.

2. 2. Season the pork tenderloin with garlic powder, thyme, salt, and pepper.

3. 3. Heat a large oven-safe skillet over medium-high heat. Sear the pork on all sides until browned, about 2-3 minutes per side.

4. 4. Transfer the skillet to the oven and roast for 15-20 minutes, or until the pork reaches an internal temperature of 145°F.

5. 5. In a small saucepan, combine the apple cider and brown sugar. Bring to a simmer and cook until reduced by half, about 5-7 minutes.

6. 6. Remove the pork from the oven and brush with the apple cider glaze.

7. 7. In a separate pot, cover the sweet potato cubes with water and bring to a boil. Reduce heat and simmer until tender, about 15-20 minutes.

8. 8. Drain the sweet potatoes and mash with milk, salt, and nutmeg until smooth and creamy.

9. 9. Slice the pork tenderloin and serve with the sweet potato mash, drizzling any remaining glaze over the top.

Notes

For best results, use high-quality, fresh ingredients. The apple cider glaze can be made in advance and reheated before serving. Adjust the cooking times based on the size of your pork tenderloin. Garnish with fresh thyme or chopped parsley, if desired.
