Ingredients

– 2 cups cooked brown rice

– 1 (15 oz) can black beans, rinsed and drained

– 1 cup diced bell peppers

– 1/2 cup diced onions

– 2 cloves garlic, minced

– 1 tablespoon chili powder

– 1 teaspoon ground cumin

– 1/2 teaspoon smoked paprika

– 1/4 teaspoon cayenne pepper (optional)

– Salt and pepper to taste

– 6 large whole wheat tortillas

– 1 cup shredded vegan cheese (optional)

– 1/2 cup diced avocado

– 1/4 cup chopped cilantro


Instructions

1. In a large skillet, sauté the diced bell peppers and onions over medium heat until softened, about 5 minutes.

2. Add the minced garlic and cook for an additional minute, until fragrant.

3. Stir in the cooked brown rice, black beans, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Season with salt and pepper to taste.

4. Heat the tortillas according to package instructions.

5. Divide the rice and bean mixture evenly among the tortillas. Top with shredded vegan cheese (if using), diced avocado, and chopped cilantro.

6. Fold the tortillas into burrito shapes and enjoy!

Notes

For added fiber, you can substitute the brown rice with quinoa or cauliflower rice. Feel free to customize the fillings with your favorite vegetables or protein sources.
