Ingredients
– 1 cup heavy cream
– 3 large egg yolks
– 1/2 cup granulated sugar
– 1 cup shelled pistachios, toasted and finely chopped
– 8 ounces dark chocolate, chopped
– 1/2 cup heavy cream
Instructions
1. 1. In a medium bowl, beat the 1 cup of heavy cream until stiff peaks form. Set aside.
2. 2. In a separate bowl, whisk together the egg yolks and sugar until light and fluffy.
3. 3. Fold the whipped cream into the egg yolk mixture, then gently fold in the chopped pistachios.
4. 4. Pour the pistachio mousse into a serving dish or individual ramekins and refrigerate for at least 2 hours.
5. 5. In a small saucepan, heat the 1/2 cup of heavy cream over medium heat until just simmering. Remove from heat and add the chopped dark chocolate. Stir until the chocolate is melted and the mixture is smooth.

Notes
