Description

Indulge in these rich and decadent Pistachio Chocolate Lava Cakes, where a molten chocolate center is encased in a pistachio-infused cake shell. Serve warm with a scoop of vanilla ice cream for the ultimate treat.

Ingredients

– 6 oz dark chocolate, chopped

– 1/2 cup unsalted butter, cubed

– 3 large eggs

– 3 egg yolks

– 1/2 cup granulated sugar

– 1/4 cup all-purpose flour

– 1/2 cup chopped pistachios, plus more for garnish

Instructions

1. 1. Preheat the oven to 450°F. Grease four 6-oz ramekins and dust with cocoa powder.

2. 2. In a double boiler or microwave, melt the chocolate and butter, stirring until smooth. Allow to cool slightly.

3. 3. In a medium bowl, whisk together the eggs, egg yolks, and sugar until light and fluffy.

4. 4. Fold the melted chocolate mixture into the egg mixture until well combined. Fold in the flour and 1/2 cup chopped pistachios.

5. 5. Divide the batter evenly among the prepared ramekins.

6. 6. Bake for 8-10 minutes, until the edges are set but the centers are still soft and gooey.

7. 7. Let the lava cakes cool for 1 minute, then invert onto plates. Garnish with additional chopped pistachios and serve immediately.

Notes

For best results, use high-quality dark chocolate. You can also make these cakes ahead of time and refrigerate until ready to bake. Adjust baking time as needed if making larger or smaller portions.
