Ingredients
– 8 ounces bow tie pasta
– 1 medium beet, peeled and chopped
– 1 cup heavy cream
– 1 cup grated Parmesan cheese
– 2 cloves garlic, minced
– 2 tablespoons unsalted butter
– 1 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil. Cook the bow tie pasta according to package instructions until al dente. Drain and set aside.
2. In a blender, combine the chopped beet, heavy cream, Parmesan cheese, garlic, butter, salt, and pepper. Blend until smooth and creamy.
3. Transfer the beet Alfredo sauce to a medium saucepan and heat over medium, stirring frequently, until warmed through and slightly thickened, about 5 minutes.
4. Add the cooked bow tie pasta to the beet Alfredo sauce and toss to coat.

Notes
