These Pineapple Upside Sugar Cookies are a delightful twist on a classic. Packed with juicy pineapple chunks and a soft, chewy texture, they’re the perfect sweet treat.
Ingredients
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 1 large egg
– 2 teaspoons vanilla extract
– 1 cup chopped fresh pineapple
Instructions
1. – Preheat oven to 375°F. Line a baking sheet with parchment paper.
2. – In a medium bowl, whisk together the flour, baking powder, and salt.
3. – In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla.
4. – Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped pineapple.
5. – Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
6. – Bake for 12-14 minutes, until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For chunkier pineapple pieces, cut the fruit into 1/2-inch cubes. Store cookies in an airtight container for up to 5 days.
