Ingredients

– 2 cups fresh pineapple, cut into 1-inch chunks

Instructions

1. In a large bowl, whisk together the flour, baking powder, and salt.

2. In a separate bowl, beat the eggs and milk together until well combined.

3. Pour the egg mixture into the dry ingredients and stir until a thick batter forms.

4. Gently fold the pineapple chunks into the batter.

5. In a large skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F.
