Ingredients
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 2 eggs
– 1 cup milk
– 2 cups fresh pineapple, cut into 1-inch chunks
– Vegetable oil for frying
– Honey for drizzling (optional)
Instructions
1. In a large bowl, whisk together the flour, baking powder, and salt.
2. In a separate bowl, beat the eggs and milk together until well combined.
3. Pour the egg mixture into the dry ingredients and stir until a thick batter forms.
4. Gently fold the pineapple chunks into the batter.
5. In a large skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F.
6. Working in batches, carefully drop spoonfuls of the pineapple batter into the hot oil.
7. Fry the fritters for 2-3 minutes per side, or until golden brown and crispy.
8. Transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
9. Serve the pineapple fritters warm, drizzled with honey if desired.
Notes
For a crispier texture, let the batter rest for 30 minutes before frying. You can also add a teaspoon of vanilla extract or a pinch of cinnamon to the batter for extra flavor.
