Ingredients
– 8 cups chicken or vegetable broth
– 8 ounces dried Persian noodles (or egg noodles)
– 1 cup shredded chicken (optional)
– 1 cup thinly sliced carrots
– 1 cup chopped onion
– 3 cloves garlic, minced
– 1 tablespoon dried dill
– 1 teaspoon ground turmeric
– Salt and pepper to taste
– Chopped fresh parsley, for garnish
Instructions
1. In a large pot, bring the broth to a boil over high heat.
2. Add the noodles and reduce the heat to medium-low. Simmer for 8-10 minutes, or until the noodles are tender.
3. Stir in the shredded chicken (if using), carrots, onion, garlic, dill, and turmeric. Season with salt and pepper to taste.
4. Simmer for an additional 5-7 minutes, or until the vegetables are tender.
5. Ladle the soup into bowls and garnish with chopped fresh parsley.
Notes
For a vegetarian version, omit the chicken and use vegetable broth. You can also add other vegetables, such as spinach or peas, to the soup. Leftover soup can be stored in the refrigerator for up to 4 days.
