Ingredients

– 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces

– 2 tablespoons olive oil

– 1 medium onion, diced

– 3 cloves garlic, minced

– 1 (12-ounce) jar pepperoncini peppers, drained and sliced

– 1 (14.5-ounce) can diced tomatoes

– 1 cup chicken broth

– 2 teaspoons Italian seasoning

– 1/2 teaspoon crushed red pepper flakes (optional)

– Salt and black pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken and cook, stirring occasionally, until the chicken is lightly browned, about 5 minutes.

3. Add the onion and garlic to the skillet and cook for 2-3 minutes, until fragrant.

4. Stir in the sliced pepperoncini peppers, diced tomatoes, chicken broth, Italian seasoning, and red pepper flakes (if using). Season with salt and black pepper to taste.
