Ingredients

– 1 cup (240 ml) aquafaba (liquid from a can of chickpeas)

– 1/2 cup (125 g) creamy peanut butter

– 1/2 cup (60 g) powdered sugar

– 1 teaspoon (5 ml) vanilla extract


Instructions

1. In a large, clean bowl, beat the aquafaba with an electric mixer until stiff peaks form, about 5-7 minutes.

2. In a separate bowl, whisk together the peanut butter, powdered sugar, and vanilla extract until smooth.

3. Gently fold the peanut butter mixture into the whipped aquafaba until well combined and no streaks remain.

4. Spoon the Peanut Butter Mousse into individual serving dishes or one larger serving bowl.

5. Refrigerate for at least 30 minutes before serving to allow the mousse to set.

6. Serve chilled, garnished with a drizzle of chocolate sauce, chopped peanuts, or fresh berries, if desired.

Notes
