Instructions
1. Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
2. In a large bowl, mix together the peanut butter, sugar, and egg until a smooth dough forms.
3. Scoop 1 tablespoon of dough and flatten it into a disc. Place a mini peanut butter cup in the center and wrap the dough around it, sealing it completely.
4. Place the filled cookies on the prepared baking sheet, spacing them about 2 inches apart.
5. Bake for 8-10 minutes, until the edges are lightly golden. Be careful not to overbake.
6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
