Ingredients
– 1 cup (2 sticks) unsalted butter, softened
– 1 cup creamy peanut butter
– 1 cup packed brown sugar
– 1 cup granulated sugar
– 2 large eggs
– 2 teaspoons vanilla extract
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
Instructions
1. – Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper.
2. – In a large bowl, beat the butter and peanut butter together until combined. Add the brown sugar and granulated sugar and beat until light and fluffy.
3. – Beat in the eggs one at a time, then stir in the vanilla.
4. – In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
5. – Scoop rounds of dough, about 1.5 tablespoons each, onto the prepared baking sheets, spacing them about 2 inches apart.
6. – Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
7. – Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
– For chunkier cookies, use crunchy peanut butter.
– Store cookies in an airtight container at room temperature for up to 1 week.
– Freeze baked cookies for up to 3 months.
