Ingredients

– 2 cups chopped fresh peaches

– 1/4 cup granulated sugar

– 1 teaspoon ground cinnamon

– 1 (8 oz) package cream cheese, softened

– 1/2 cup powdered sugar

– 1 teaspoon vanilla extract

– 1 cup all-purpose flour

– 1/4 cup brown sugar

– 1/4 cup unsalted butter, chilled and cubed

– 12 ice cream cones

Instructions

1. – Preheat oven to 375°F. Grease a 12-cup muffin tin.

2. – In a medium bowl, combine the chopped peaches, granulated sugar, and cinnamon. Set aside.

3. – In a separate bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.

4. – In a third bowl, whisk together the flour and brown sugar. Cut in the chilled butter until mixture resembles coarse crumbs.

5. – Spoon a heaping tablespoon of the peach mixture into each ice cream cone. Top with a dollop of the cheesecake mixture, followed by a sprinkle of the cobbler topping.

6. – Bake for 15-18 minutes, until the cobbler topping is golden brown.

7. – Allow to cool for 5 minutes before serving.

Notes

For a more indulgent treat, top the cooled cones with a drizzle of caramel sauce or a scoop of vanilla ice cream.
