Description

Crispy, golden Parmesan Pesto Roasted Potatoes are a flavor-packed side dish that’s easy to make and sure to impress. Tossed in a fragrant garlic-herb pesto and baked to perfection, these potatoes are irresistibly delicious.


Ingredients

– 2 lbs Yukon Gold potatoes, cubed

– 1/2 cup prepared basil pesto

– 1/2 cup grated parmesan cheese

– 2 tbsp olive oil

– 1 tsp garlic powder

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. 1. Preheat oven to 400°F. Line a large baking sheet with parchment paper.

2. 2. In a large bowl, toss the cubed potatoes with the pesto, parmesan, olive oil, garlic powder, salt, and pepper until evenly coated.

3. 3. Spread the potatoes in a single layer on the prepared baking sheet.

4. 4. Roast for 25-30 minutes, flipping halfway, until the potatoes are crispy and golden brown.

5. 5. Serve hot, garnished with additional parmesan and fresh basil if desired.

Notes

For extra crispy potatoes, toss them in the pesto mixture first, then let them sit for 10-15 minutes before roasting to allow the starch to develop. You can also use any type of potato, but Yukon Golds work best for their creamy interior and crispy exterior.
