Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 2 large eggs

– 1 tablespoon grated orange zest

– 2 tablespoons freshly squeezed orange juice

– 2 tablespoons honey

– 1 tablespoon grated fresh ginger


Instructions

1. – Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.

2. – In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. – In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes.

4. – Add the eggs one at a time, beating well after each addition. Stir in the orange zest, orange juice, honey, and grated ginger.

5. – Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

6. – Scoop the batter evenly into the prepared muffin cups, filling them about 3/4 full.

7. – Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.

8. – Allow the cakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
