Description
Enjoy a delicious and easy one-pot meal with this Shawarma-inspired Chicken and Rice dish. Tender, flavorful chicken is simmered together with fragrant spices and fluffy rice for a comforting and satisfying weeknight dinner.
Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 tablespoons olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tablespoons shawarma seasoning (or a blend of cumin, coriander, cinnamon, and paprika)
– 1 cup uncooked long-grain white rice
– 2 cups chicken broth
– 1/4 cup chopped fresh parsley
– Salt and pepper to taste
Instructions
1. In a large, deep skillet or Dutch oven, heat the olive oil over medium-high heat.
2. Add the chicken pieces and cook for 3-4 minutes, until lightly browned on all sides. Remove the chicken from the pan and set aside.
3. Reduce the heat to medium and add the diced onion to the pan. Cook for 5 minutes, stirring occasionally, until the onion is softened.
4. Add the minced garlic and shawarma seasoning to the pan. Cook for 1 minute, stirring constantly, until fragrant.
5. Stir in the uncooked rice and chicken broth. Bring the mixture to a boil.
6. Return the seared chicken pieces to the pan, cover, and reduce the heat to low. Simmer for 15-20 minutes, until the rice is tender and the chicken is cooked through.
7. Remove from heat and stir in the chopped parsley. Season with salt and pepper to taste.
8. Serve the One Pot Shawarma Chicken and Rice immediately, garnished with additional parsley if desired.
Notes
For extra flavor, you can use chicken thighs instead of breasts. You can also adjust the amount of shawarma seasoning to suit your taste preferences. Leftovers can be stored in the refrigerator for up to 4 days.
