Ingredients

– 2 cups pecans, chopped

– 1 cup dried cranberries

– 1 cup brown sugar

– 1/2 cup butter, melted

– 1 teaspoon vanilla extract

– 1/4 teaspoon salt

Instructions

1. – In a large bowl, combine the chopped pecans and dried cranberries.

2. – In a separate bowl, whisk together the brown sugar, melted butter, vanilla, and salt until well combined.

3. – Pour the sugar mixture over the nut and cranberry mixture and stir until fully coated.

4. – Scoop heaping tablespoons of the mixture onto a parchment-lined baking sheet, spacing them about 2 inches apart.

5. – Refrigerate for at least 1 hour before serving to allow the cookies to firm up.

Notes

For a more festive look, you can add a sprinkle of crushed candy canes or white chocolate chips on top of the cookies. These cookies can be stored in an airtight container in the refrigerator for up to 1 week.
