Description

Ingredients

– 2 cups graham cracker crumbs

– 6 tablespoons unsalted butter, melted

– 1 (8 ounce) package cream cheese, softened

– 1 cup plain Greek yogurt

– 1/2 cup honey

– 1 teaspoon vanilla extract

– 1/4 cup chia seeds

– 2 cups fresh blueberries


Instructions

1. In a medium bowl, mix together the graham cracker crumbs and melted butter until well combined.

2. Press the crumb mixture into the bottom and up the sides of a 9-inch pie dish. Refrigerate for 30 minutes.

3. In a large bowl, beat the cream cheese until smooth. Add the Greek yogurt, honey, and vanilla extract, and mix until fully incorporated.

4. Gently fold in the chia seeds and 1 1/2 cups of the fresh blueberries.

5. Spoon the filling into the prepared graham cracker crust, smoothing the top.

6. Refrigerate the pie for at least 4 hours, or until firm.

7. Top the pie with the remaining 1/2 cup of fresh blueberries just before serving.
