Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 cups chopped kale

– 1 cup diced carrots

– 1 cup diced potatoes

– 1 cup diced zucchini

– 4 cups vegetable broth

– 2 teaspoons dried thyme

– 1 teaspoon dried rosemary

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 tablespoon lemon juice

– 2 tablespoons chopped fresh parsley


Instructions

1. In a large pot, heat the olive oil over medium heat.

2. Add the diced onion and minced garlic, and sauté for 2-3 minutes until fragrant.

3. Add the chopped kale, diced carrots, potatoes, and zucchini to the pot. Sauté for 5 minutes, stirring occasionally.

4. Pour in the vegetable broth and stir in the dried thyme, rosemary, salt, and pepper.

5. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the vegetables are tender.

6. Stir in the lemon juice and chopped fresh parsley.

Notes
