Ingredients
– 2 pounds fresh mussels, cleaned and debearded
– 4 tablespoons unsalted butter
– 4 cloves garlic, minced
– 1 cup dry white wine
– 2 tablespoons fresh parsley, chopped
– 1 lemon, cut into wedges
– Salt and freshly ground black pepper to taste
Instructions
1. Rinse the mussels under cold running water, scrubbing the shells and removing the beard (the stringy bits hanging from the shell).
2. In a large pot or Dutch oven, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.
3. Pour in the white wine and bring the mixture to a simmer. Add the cleaned mussels, cover the pot, and cook for 5-7 minutes, or until the mussels have opened up.
4. Discard any mussels that did not open. Stir in the chopped parsley and season with salt and pepper to taste.
5. Serve the Mussels in White Wine Garlic Sauce immediately, with lemon wedges on the side for squeezing over the top.
Notes
For best results, use fresh, high-quality mussels. If a mussel does not open, it should be discarded. Serve with crusty bread for dipping in the delicious sauce.
