Ingredients
– 1 sheet puff pastry, thawed
– 8 oz. button or cremini mushrooms, sliced
– 1 shallot, minced
– 2 garlic cloves, minced
– 2 tbsp. unsalted butter
– 1 tsp. fresh thyme leaves
– 1/2 tsp. salt
– 1/4 tsp. black pepper
– 1 cup shredded Gruyère cheese
– 1 egg, beaten with 1 tbsp. water for egg wash
Instructions
1. – Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. – In a skillet, melt the butter over medium heat. Add the mushrooms, shallot, and garlic. Cook for 5-7 minutes, until mushrooms are tender and liquid has evaporated.
3. – Season with thyme, salt, and pepper. Remove from heat and let cool slightly.
4. – On a lightly floured surface, roll the puff pastry into a 12×16-inch rectangle. Transfer to the prepared baking sheet.
5. – Leaving a 1-inch border, spread the mushroom mixture down the center of the pastry. Top with the Gruyère cheese.
6. – Using a sharp knife, make diagonal cuts from the filling to the edge of the pastry, about 1 inch apart. Fold the strips over the filling, alternating sides to create a braid.
7. – Brush the pastry with the egg wash.
8. – Bake for 20-25 minutes, until the pastry is golden brown. Let cool for 5 minutes before slicing and serving.
Notes
For a richer flavor, use a mixture of mushroom varieties. Substitute other cheese options, such as Parmesan or Fontina, if desired.
