Ingredients

– 24 ounces cream cheese, softened

– 1 cup granulated sugar

– 4 large eggs

– 1/4 cup sour cream

– 2 tablespoons all-purpose flour

– 1 teaspoon vanilla extract

– 1 tablespoon Earl Grey tea leaves, finely ground

– 1 cup fresh mulberries, plus more for garnish


Instructions

1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and set aside.

2. In a large mixing bowl, beat the cream cheese with a hand mixer until smooth and creamy, about 2-3 minutes.

3. Gradually add the sugar, mixing well after each addition until the mixture is light and fluffy.

4. Add the eggs one at a time, beating well after each addition.

5. Fold in the sour cream, flour, and vanilla extract until just combined.

6. Stir in the ground Earl Grey tea leaves and the 1 cup of fresh mulberries.

7. Pour the batter into the prepared springform pan and smooth the top.

8. Bake for 55-60 minutes, or until the center is almost set. The cheesecake should still have a slight jiggle in the center.

9. Turn off the oven, prop the door open slightly, and let the cheesecake cool in the oven for 1 hour.

10. Remove the cheesecake from the oven and let it cool completely on a wire rack.

11. Refrigerate the cheesecake for at least 4 hours or overnight before serving.

12. When ready to serve, run a knife around the edge of the pan and release the springform ring.

13. Top the cheesecake with additional fresh mulberries and serve chilled.

Notes

For a more pronounced Earl Grey flavor, you can steep the tea leaves in the sour cream for 30 minutes before adding it to the batter. You can also garnish the cheesecake with a dusting of powdered sugar or a drizzle of honey for extra sweetness.
