Ingredients

– 24 ounces cream cheese, softened

– 1 cup granulated sugar

– 1/4 cup all-purpose flour

– 4 large eggs

– 1 tablespoon earl grey tea leaves

– 2 cups fresh mulberries

– 1/4 cup mulberry jam


Instructions

1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

2. In a large bowl, beat the cream cheese with a hand mixer until smooth and creamy, about 2-3 minutes.

3. Gradually add the sugar and flour, mixing until well combined.

4. Add the eggs one at a time, beating well after each addition.

5. Stir in the earl grey tea leaves, mixing until fully incorporated.

6. In a separate bowl, gently fold in the fresh mulberries and mulberry jam.

7. Pour the mulberry mixture into the prepared springform pan, spreading it evenly.

8. Bake for 55-65 minutes, or until the center is almost set. Allow the cheesecake to cool completely on a wire rack.

9. Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.

Notes

For a more intense earl grey flavor, you can steep the tea leaves in the cream cheese mixture for 30 minutes before adding the other ingredients. You can also experiment with different types of berries, such as raspberries or blackberries, in place of the mulberries.
