Ingredients

– 1 lb summer sausage, sliced

– 1 lb andouille sausage, sliced

– 1 onion, diced

– 2 bell peppers, diced

– 3 cloves garlic, minced

– 1 can (14.5 oz) diced tomatoes

– 1 cup chicken broth

– 1 tsp dried thyme

– 1 tsp smoked paprika

– 1/4 tsp cayenne pepper

– Salt and pepper to taste


Instructions

1. – In a large skillet, cook the summer sausage and andouille sausage over medium-high heat until browned, about 5-7 minutes. Remove sausage from skillet and set aside.

2. – Add the onion and bell peppers to the skillet and sauté for 3-4 minutes until softened.

3. – Add the garlic and cook for 1 minute until fragrant.

4. – Pour in the diced tomatoes, chicken broth, thyme, smoked paprika, and cayenne. Bring the mixture to a simmer.

5. – Add the cooked sausage back to the skillet and let everything simmer for 10-15 minutes, until the sauce has thickened.

6. – Season with salt and pepper to taste.

7. – Serve the Summer Sausage Skillet over rice, pasta, or with crusty bread.
