Ingredients
– 1 cup dried brown lentils, rinsed
– 1 onion, diced
– 3 cloves garlic, minced
– 2 teaspoons ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1/4 teaspoon cayenne pepper (optional)
– 4 cups vegetable or chicken broth
– 1 (14.5 oz) can diced tomatoes
– 1 cup chopped fresh cilantro, plus more for garnish
– Salt and pepper to taste
– Olive oil for drizzling
Instructions
1. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent.
2. Add the minced garlic and sauté for an additional minute, until fragrant.
3. Stir in the cumin, coriander, cinnamon, ginger, and cayenne (if using). Cook for 1 minute to toast the spices.
4. Pour in the vegetable or chicken broth and add the rinsed lentils. Bring the mixture to a boil.
5. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the lentils are tender.
6. Stir in the diced tomatoes and chopped cilantro. Season with salt and pepper to taste.
7. Serve the Moroccan Lentil Soup hot, garnished with additional cilantro and a drizzle of olive oil.
Notes
For a creamier texture, you can use an immersion blender to blend a portion of the soup. Adjust the amount of broth to reach your desired consistency. This soup also freezes well for up to 3 months.
