Ingredients
– 2 cups all-purpose flour
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, chilled and cubed
– 1/4 cup cold water
– 1 cup raw almonds, finely chopped
– 1/4 cup honey
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1 egg, beaten with 1 tablespoon water for egg wash
Instructions
1. In a food processor, pulse the flour and salt together. Add the chilled butter and pulse until the mixture resembles coarse crumbs. Slowly add the cold water and pulse until the dough just begins to come together.
2. Turn the dough onto a lightly floured surface and gather it into a disc. Wrap in plastic and refrigerate for at least 30 minutes.
3. In a small bowl, combine the chopped almonds, honey, cinnamon, and ginger. Mix well.
4. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
5. On a lightly floured surface, roll the dough out to a 12-inch square. Cut the dough into 12 equal rectangles.
6. Place a heaping tablespoon of the almond mixture onto the center of each rectangle. Fold the dough over the filling, forming a cigar shape, and press the edges to seal.
7. Place the cigars seam-side down on the prepared baking sheet. Brush the tops with the egg wash.
8. Bake for 20-25 minutes, or until the pastry is golden brown. Serve warm or at room temperature.
Notes
For a more pronounced honey flavor, increase the honey in the filling to 1/3 cup. You can also experiment with different nuts, such as pistachios or cashews, in place of the almonds.
