Ingredients
– 2 pounds boneless, skinless chicken breasts, diced
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 2 teaspoons ground cumin
– 1 teaspoon paprika
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon cayenne pepper
– 1/4 cup chopped fresh parsley
– Salt and pepper to taste
– 1 batch of msmen (Moroccan flatbread) dough
– 1 egg, beaten
Instructions
1. In a large skillet, sauté the onion and garlic until softened, about 5 minutes.
2. Add the diced chicken, cumin, paprika, cinnamon, and cayenne pepper. Cook, stirring occasionally, until the chicken is cooked through, about 10 minutes.
3. Remove the skillet from heat and stir in the chopped parsley. Season with salt and pepper to taste.
4. On a lightly floured surface, roll out the msmen dough into thin rounds, about 6-8 inches in diameter.
5. Place a heaping spoonful of the chicken mixture in the center of each round. Fold the dough over the filling to form a half-moon shape and crimp the edges to seal.
6. In a large skillet or on a griddle, cook the stuffed msmen over medium heat, about 2-3 minutes per side, until golden brown.
7. Brush the tops of the cooked msmen with the beaten egg.
8. Serve the Moroccan Chicken-Stuffed Msmen warm, garnished with additional parsley if desired.
Notes
For a flakier texture, you can chill the filled msmen before cooking. Leftover msmen can be stored in an airtight container in the refrigerator for up to 3 days.
