Ingredients
– 2 cups cooked shredded chicken
– 1 packet taco seasoning
– 1 can diced tomatoes
– 1 can black beans, drained and rinsed
– 1 cup shredded cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 2 cups crushed tortilla chips
– 1/2 cup sour cream
– 1/4 cup chopped fresh cilantro
Instructions
1. – Preheat oven to 375°F. Grease a 9×13 baking dish.
2. – In a large bowl, mix together the shredded chicken, taco seasoning, diced tomatoes, and black beans.
3. – Spread the chicken mixture into the prepared baking dish. Top with the cheddar and Monterey Jack cheeses, then the crushed tortilla chips.
4. – Bake for 20-25 minutes, until the cheese is melted and bubbly.
5. – Remove from oven and let cool for 5 minutes. Dollop with sour cream and sprinkle with fresh cilantro before serving.
