Ingredients

– 8 ounces goat cheese, softened

– 4 ounces cream cheese, softened

– 1/2 cup cooked, crumbled bacon

– 2 tablespoons chopped fresh parsley

– 1 teaspoon dried thyme

– 1/4 teaspoon garlic powder

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. In a medium bowl, combine the goat cheese, cream cheese, bacon, parsley, thyme, garlic powder, salt, and pepper. Mix until well blended.

2. Lay a large piece of plastic wrap on a flat surface. Spoon the cheese mixture onto the center of the plastic wrap and shape it into a log, approximately 6-8 inches long.

3. Wrap the plastic wrap tightly around the log and refrigerate for at least 30 minutes, or up to 2 days.

4. When ready to serve, unwrap the log and roll it in the remaining crumbled bacon to coat the outside.
