Description

Ingredients

– 1 block (14 oz) extra-firm tofu, cut into 1-inch cubes

– 1 red bell pepper, cut into 1-inch pieces

– 1 yellow bell pepper, cut into 1-inch pieces

– 1 red onion, cut into 1-inch pieces

– 3 cloves garlic, minced

– 2 tablespoons olive oil

– 1 tablespoon lemon juice

– 1 teaspoon ground cumin

– 1 teaspoon paprika

– 1/2 teaspoon ground coriander

– 1/4 teaspoon cayenne pepper

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. In a large bowl, combine the tofu, bell pepper pieces, onion, and garlic.

2. In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, coriander, cayenne, salt, and black pepper.

3. Pour the marinade over the tofu and vegetable mixture and toss gently to coat.

4. Thread the marinated tofu and vegetables onto wooden or metal skewers, alternating the ingredients.

5. Preheat a grill or grill pan to medium-high heat.

6. Grill the kebabs for 10-12 minutes, turning occasionally, until the vegetables are tender and the tofu is lightly charred.

7. Serve the Middle Eastern Tofu Kebabs hot, with your choice of accompaniments such as pita bread, hummus, or a fresh salad.

Notes

For best results, let the tofu and vegetables marinate for at least 30 minutes before grilling. You can also try different vegetable combinations, such as zucchini, eggplant, or mushrooms.
