This Mexican Street Cauliflower is a flavor-packed, easy-to-make side dish that’s perfect for busy weeknights. Roasted cauliflower florets are tossed in a zesty seasoning blend for a delicious, family-friendly meal.
Ingredients
– 1 head of cauliflower, cut into florets
– 2 tablespoons olive oil
– 1 teaspoon chili powder
– 1 teaspoon cumin
– 1 teaspoon garlic powder
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon cayenne pepper (optional, for heat)
– 1/4 teaspoon salt
– 2 tablespoons chopped fresh cilantro
Instructions
1. – Preheat your oven to 400°F (200°C).
2. – In a large bowl, toss the cauliflower florets with the olive oil, chili powder, cumin, garlic powder, smoked paprika, cayenne pepper (if using), and salt until well coated.
3. – Spread the seasoned cauliflower in a single layer on a baking sheet.
4. – Roast for 20-25 minutes, or until the cauliflower is tender and lightly browned.
5. – Remove the cauliflower from the oven and transfer it to a serving bowl.
6. – Sprinkle the chopped fresh cilantro over the top and toss to combine.
7. – Serve hot and enjoy!
Notes
