Ingredients
– 2 boneless, skinless chicken breasts
– 1 cup plain Greek yogurt
– 1 cucumber, diced
– 1 red onion, thinly sliced
– 1 cup cherry tomatoes, halved
– 1/2 cup crumbled feta cheese
– 2 tablespoons chopped fresh dill
– 2 tablespoons lemon juice
– 1 garlic clove, minced
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F. Season the chicken breasts with salt and pepper and place on a baking sheet. Bake for 20-25 minutes, or until the chicken is cooked through. Let cool, then shred or chop the chicken.
2. – In a large bowl, combine the shredded chicken, Greek yogurt, diced cucumber, sliced red onion, halved cherry tomatoes, crumbled feta cheese, and chopped fresh dill.
3. – Drizzle the lemon juice over the salad and toss gently to coat. Season with additional salt and pepper to taste.

Notes
For a creamier dressing, add an extra tablespoon or two of Greek yogurt. You can also swap out the chicken for grilled shrimp or salmon for a different protein.
